We're your customers. That's right, we pay your bills - so listen up. We have names, and they're not: "Hi there." "Hey, welcome," "Good evening," "Good to see you," "Right this way," "Please follow me," "I'll be right with you," "I'll be your waitperson tonight," "Thanks for coming," "Come back again," or "Hey, you!"

A "chicken or egg" argument can be made for you guys calling us by our names and our becoming your restaurant regulars vs. our becoming restaurant regulars thereby forcing you to call us by our names. We vote for argument No. 1, because there is nothing we love hearing more than our own names - unless it's the five o'clock whistle. We don't have a resident psychologist to explain it to you, but let's have a try anyway. How about: it makes us feel welcome and important.

Consider the sad day the corner drugstore closed, succumbing to the pressures of national chain and supermarket pharmacy competition. Frank, the owner/pharmacist who knew each family member's name, would have a cup of coffee with us, time permitting.

With the closing, his customers were forced, mostly out of convenience, to switch to the supermarket pharmacy. It's interesting how little employee turnover this pharmacy has, but for twelve years, every time we pickup a prescription they still ask for our names.

We understand the difference between actually knowing us as customers and calling us by name. But we're telling you the best way to know us, is to call us by name. You will not be able to know everyone's name if we show as a group. But hearing you call one of our groups' name, makes us feel you might use our name when we come back on our own.

You say it's too difficult learning and using names when you're running hot and heavy. You already have a seating chart and a customer waitlist and/or a reservation book, right? If you don't, it takes about thirty minutes to make them. Why not buy a pad of 3 M Post-it Notes while you're at it (get a color close to your table or tablecloth's), and then you're ready to go.

If you take reservations, you already know our name. Write it on a 3M Post-It along with the table number. If you don't take reservations, ask for our last name even if there is no waitlist. Again write our name and table number on the Post-it, and hand it to the seating person who then says, "Mr. Jones, right this way." The seating person hands the Post-It to the waitperson who sticks it on their order pad and says, "Good evening, Mr. Jones, I'm Ralph, and I'm going to take good care of you tonight." Pretty simple way to get us to tip better, huh?

There could be a lot of variations to this including just sticking the Post-It on the edge of the table (the reason for the Post-It color) if the waitperson is not easily found. This approach "flags" you or your floor manager that our table has not yet been greeted. Ever wonder why high-end restaurants are so good about using our name? They take reservations and seat us with a waitperson's order ticket on which our name is written.

The sense of belonging that hearing our name engenders is very powerful medicine indeed. Ask anyone (even those too young to have watched the original broadcasts) what the last phrase of the "Cheers" sitcom theme song is, and a majority will reel off, "Where everybody knows your name." Restaurant Wine Serving Tips

If your restaurant will be serving wine, you must take care to serve it properly. Wine served properly can enhance and optimize the taste and bouquet, while serving it improperly will cause your wine to taste differently, even badly.

Temperature

Most wines have a proper serving temperature for optimal taste. Light colored wines, including white wines, ros?s and most sparkling wines will taste their best if served chilled at about 45 to 50 degrees. This temperature can be obtained by refrigerating the wine for about 1 - 2 hours before serving. Red wines are usually best served at a slightly cool room temperature, typically 60 to 65 degrees. Remember that on a hot day, all wines should be served slightly cooler than usual.

Chilling Wine

Your restaurant should have a proper ice bucket which allows you to fill it about 3/4 full of ice with some water. Place the wine in the bucket for 30 minutes before serving. Having the wine properly chilled will let your customers taste the wine at its best.

Glassware

The shape of the glass that wine is served in has an effect on the taste and bouquet of any wines you serve. Your restaurant should have the proper glassware for serving wines, this includes champagne glasses, flutes, rhines, port glasses, sherry glasses and all purpose wine glasses. White wine should be served in tulip shaped glasses. Red wine should be served in larger, rounded glasses with a nice size bowl. Sparkling wine and champagne should be served in tall and thin flute glasses.

Opening The Bottle

The server should use a high quality corkscrew to open the wine for the customer. There are several types of corkscrews, including the traditional, winged and screwpull. A restaurant should usually use a waiters corkscrew, made in stainless steel, it has a very sharp, serrated foil cutter with a thumb stud and a 5 turn steel spiral. Using the waiters corkscrew, remove the foil using the blade. Push the point of the corkscrew into the middle of the cork. Continue twisting the corkscrew until just one loop remains above the cork. Place the notch on top of the lever onto the lip of the wine bottle. Hold the tip of the lever against the bottle's lip, while using your other hand to stabilize the bottle, then slowly lift the lever to ease the cork out of the bottle about two thirds of the way. Grab the rest of the cork with your fingers and twist out. Use a napkin to wipe any wine from the bottle.

Opening Your First Restaurant

Talk about a difficult endeavor. Opening your first restaurant is not an easy achievement. Normally the process takes a year or more after you decide to go for it. And the planning involved is immense! You have to get a business license, sign a lease agreement for your building, equipment to buy, contracts with food providers, employees to hire, advertising, . . The list goes on and on!

But you continue on. Why? Obviously it is not the documented numbers for success. Some of those numbers say you have a 90% failure rate. But no worries, you?ve got something more to offer. This is your dream, and no analyst, or dumb numbers will take it away from you.

And you know what? You?re right! Any number that is published is still just a number, and numbers do not know passion. And hell, even if those numbers do hold out, you still did something to try to achieve your dream. Most people just think about it, but you?re doing it!

Even so, no matter how much you want your dreams of owning a successful restaurant to come true, they will not unless you work hard for it. Yes, sorry, but it is true. You have to work very hard for it. Really, really hard. I don?t think I can emphasize it enough, you have to work hard (times a googol) to fulfill your dream.

The following are three lessons I believe are the most important to make your new restaurant a success:

Don?t Let Them Come to You ? Go To Them
Some new restaurant owners think that if they open a restaurant, people will magically find out about it and will instantly become regulars. Sorry, but it just doesn't happen like that. You WILL become the most popular restaurant in the area, but only if you work at it. You have to market! Tell everybody you can when you get a chance. Random people in the supermarket, down time during your oil change, standing in line at the bank. Hand out flyers, get on the web. PR helps a lot too! You should spend half of your time or less in the restaurant overseeing the operations. The rest of your time should be spent on getting people into your restaurant.
Give it time Every business takes time to create. Even names like Wal-Mart, IBM and Krispy Kreme took time to get going (did you know Krispy Kreme opened in 1937? And you started of hearing of them when?) Be patient, and make sure you have enough equity to keep you going for at least 2-3 years.
When the Cat?s Away, the Mice Will Play Even though you will be exhausted working the marketing/business portion of your restaurant, you must still spend a lot of your time inside you restaurant. You are the most passionate person about the restaurant. In truth, you are the only one that really cares if it is a success! Just being around embarks additional excitement in not only your help, but your customers. If you think your restaurant runs the same when you are there compared to when you are not, you are very, very wrong.

Help Stop Your Cat Scratching Your Furniture (and Save Your Sanity!)

This one's for all us cat owners living in fear for our sofas and carpets! Does your kitty like to scratch your furniture?

Its a common problem with lots of cats, especially 'flat cats' (not literally!) I mean of course kittys who live in apartments with very little outdoor exercise.

Why do they do it? Not as people commonly think to sharpen their claws, but to exercise, clean and keep them healthy. Cats that have lots of outdoor exercise will often use your fruit trees - which can cause major damage to the tree trunk, indoor cats will use any suitable surface - your sofa, carpet,wallpaper etc. etc.

The thing with cats is that they're creatures of habit and they 'bond' with certain surfaces or items for their 'personal hygiene' (I'll be writing about toilet training soon!). So to save your trees, soft furnishings and sanity, the trick is to get them to bond with something more suitable and take action to protect your home.

Okay so a two-pronged solution:

Save your furniture - apart from shutting your cat out of the house (no chance), declawing (illegal and very painful for the poor cat), what else can you do? There's a couple of things that spring to mind

Furniture protectors - clear plastic strips that attach to the furniture. They provide a smooth surface so kitty's claws slide off, helping to break the clawing habit.

Claw Scissors - these are a small pair of clippers suitable for indoor cats, rabbits and so on. Clipping the ends of your cat's claws regularly won't worry kitty and will help save the carpets from those claws hooking in. Not always such a good idea for outdoor cats as they use their claws for climbing and defence.

Provide 'bonding' material for your cat with Sisal scratching posts, pads and climbers. Sisal is a tough material that can withstand constant clawing and provides the type of surface that cats like to use for their grooming. They're often impregnated with catnip and come with toys attached to encourage your cat to use them.

If all else fails, pop down to your vet surgery - many run clinics where the nurses give advice on all sorts of subjects.

Modern wheelchairs are lightweight, customizable, and available for sports, battery-operated and constantly being improved. In spite of the modern feel of wheelchairs, they have been around in one form or another for much longer than most people would guess. Probably from the time that wheels were invented and the time that chairs were around, it was natural that the two would come together. A Long, Long Time Ago

The oldest existing picture of a chair with wheels is from China – in the 6th Century! The odds that they were around before someone drew a picture that would survive this long are excellent. There is also an image of a wheeled chair from Ancient Egypt. Again, it’s more likely that it exists because their culture made long-lasting images than that they invented antique wheelchairs. Records show that in the 16th Century, King Phillip of Spain owned an elaborate rolling chair and in 1700, King Louis XIV of France used a wheeled conveyance while recuperating from an operation. No doubt commoners with a flair for furniture building found uses for antique wheelchairs as well.

It was in the 18th Century that the antique wheelchairs began to resemble our modern version. It had two large front wheels and a caser in the back. After the American Civil War and World War I, antique wheelchairs were built with wooden frames, wicker seats, big spoked wheels and featured adjustable arm and foot rests. A patent was filed in 1894 for the first wheelchair that could be propelled by the occupant.

The first folding wheelchair was designed in 1932. It was invented by an injured mining engineer and a mechanical engineer who went on to found the E&J Company. These antique wheelchairs are probably quite collectible since the same company developed the first powered wheelchair in the 1950s. This is the same decade that saw wheelchair sports develop in England. The first Paralympics were held in Tokyo, Japan in 1964. Wheelchair athlete Bob Hall completed the 1975 Boston Marathon in a manual wheelchair.

Lighter weight antique wheelchairs began showing up in the 1970s and 1980s in response to the need for sports chairs. Microprocessor controls for power chairs showed up in the 1980s. After this point, the term “antique wheelchairs” seems out of place. The developments in the 1990s were very modern, but nevertheless the history of antique wheelchairs is truly amazing.

This is always a big hit. It does not have to be often, but it always a big winner. You can have lots of fun with it. We know of a restaurant that gives a prize when Mum or Dad get their face painted too. The kids think that is great fun!

We vote for argument No. 1, because there is nothing we love hearing more than our own names - unless it's the five o'clock whistle. If you take reservations, you already know our name. Write it on a 3M Post-It along with the table number. If you don't take reservations, ask for our last name even if there is no waitlist. Again write our name and table number on the Post-it, and hand it to the seating person who then says, "Mr. Jones, right this way." The seating person hands the Post-It to the waitperson who sticks it on their order pad and says, "Good evening, Mr. Jones, I'm Ralph, and I'm going to take good care of you tonight." Pretty simple way to get us to tip better, huh?

There could be a lot of variations to this including just sticking the Post-It on the edge of the table (the reason for the Post-It color) if the waitperson is not easily found. This approach "flags" you or your floor manager that our table has not yet been greeted. Ever wonder why high-end restaurants are so good about using our name? They take reservations and seat us with a waitperson's order ticket on which our name is written.

The sense of belonging that hearing our name engenders is very powerful medicine indeed. Ask anyone (even those too young to have watched the original broadcasts) what the last phrase of the "Cheers" sitcom theme song is, and a majority will reel off, "Where everybody knows your name." Adirondack Chairs: Painted Or Not?

Some of you may shudder at the idea of painting premium Adirondack chairs?be they made from pine or teak. However, while it is possible to use beautiful Adirondack chairs both inside and outdoors, most people like their chairs out on the patio or deck. Therefore, like any exterior furniture, most Adirondack chairs are exposed to the elements. As wood is prone to rotting and decay when exposed to water, some kind of sealer will be necessary to keep the furniture from being damage by the elements. Some people prefer staining, others like painting their Adirondack chairs.

In truth, wood does not breathe as well when covered by a layer or two of paint. This means that the paint will probably bubble and blister because of the gases and moisture released by the wood. Stains are specifically designed to breathe with the wood and are a better sealer for your premium Adirondack chairs than paint. However, for those that want to color coordinate their beautiful Adirondack chairs with other furnishings or d?cor, a quality paint job can protect your furniture for up to 7 or 8 years.

When painting Adirondack chairs or any wood furniture, be sure to clean the pieces first. In some cases, you may be trying to paint chairs that already have a coat or two on them. You will need to strip away any paint or sealer that is already on the chair before sanding.

Once the old paint has been removed and the furniture is clean, you can begin sanding.

At this early stage, you will want to begin with a coarse sandpaper such as 80-grit. Smooth away any rough edges and be sure to sand around any scratches in the wood with the 80-grit as this will help remove the scratches. Then, use progressively finer sandpapers until you end up finishing with 320 or finer. All of the wood on the Adirondack chair should be smooth without any rough edges (the rough edges will not disappear after painting so be sure to get them in the sanding process!). Quality Adirondack chairs will require a lot of hand sanding to get in between the gaps in the wood.

Once you are satisfied that the wood on your Adirondack furniture has no more rough edges, it is time to paint. A latex paint should be fine so long as you apply 2-3 even coats. Be sure to allow 10-15 minutes in between coats for the paint to become tacky to the touch. After you are satisfied that the Adirondack chair has enough paint on it, allow the paint to dry. A day later, apply a 2 coats of clear polyurethane sealer so that your Adirondack chair will have more protection against the elements and need repainting less often.

Then there is chair height adjustment. All office chairs must have this feature as people with longer legs will probably want the chair seat higher off the ground otherwise they may begin to feel their legs cramp up.

Then we have the seat pan characteristics. You should look for seats that have the following characteristics. The seat pan should have adequate depth and width. The material should be comfortable but offer sufficient support and the seat pan should tilt to alleviate pressure on the back of the thighs.

As for armrests, they should not interfere with the work that needs to be done but should be comfortable and provide support for the arms. In general if wide movement is needed armrests should be avoided.

And of course the chair itself should be stable. You don't want a chair that is wobbly. To ensure this you should look for a chair with a five pronged base.

Persons having difficulty in walking, those suffering from severe illness or bodily injury, and certain physically disabled persons have no other option but to use wheelchairs. The typical type of wheelchair is made up of a seat with a backrest and a footrest, along with two small front caster wheels and two larger rear wheels. Even though there are standard versions of wheelchairs, they are usually customized to suit the need of the patient or the disabled person.

The seat size, seat-to-floor height, controls, and certain other items are normally tailor-made for the individual patient to provide maximum comfort. Several optional accessories are also available, like safety belts, adjustable backrests and anti-tip bars. Mounts for crutches, oxygen cylinders, drink holders, etc. are also provided. Using the so-called omniwheel or the mecanum wheel facilitates multidirectional movement. However, it is provided only when it is absolutely necessary, since control is not as easy as the standard types of wheelchairs.

The types of wheelchairs are self-propelled, attendant-propelled, and powered. Depending on the condition of the patient or the disabled person, one of these is selected so as to give maximum comfort for the user. Attendant-propelled wheelchairs come with back handles for easy pushing. A 4 or 5-ampere rechargeable battery runs powered types. Both dry type and wet type batteries are available, though the dry type is the most preferred one. Pediatric wheelchairs are meant for the use of pregnant women. Wheelchairs for disabled sports persons are special types, incorporating features required for participation in sports.

The American with Disabilities Act of 1990 stipulates certain mandatory provisions in building construction for ease of operation by patients or disabled persons using wheelchairs. It is a statutory requirement in the United States that all new construction for public use have to be built to ADA norms. Construction of these buildings should conform to specifications of wheelchair accessible construction. Special wheelchair ramps and elevators are added in buildings so that persons with walking disabilities would not face any undue hardship. Powered doors, fixtures like sinks with lower heights, as well as large-spaced toilets with grab bars for easy maneuvering are other requirements that are generally provided for in wheelchair accessible construction of buildings.

Hospitals that have limited floors are constructed with wheelchair ramps for all the floors. However, in large multistory hospitals and buildings, the wheelchair ramp is provided only in the ground floor or the first 2 to 3 floors. Hence, fishing spots normally provide wheelchair accessible fishing facilities. Fishing is the best alternative for persons who can not practice active exercises. One of the more popular styles of furniture is wood. In the world of furniture, however, it is important to understand that this term is thrown around a bit more than it should be. Much like there is a lot of fluff flying when a car salesman tries to sell you a vehicle, the same can be said for wood claims by salesman. In this case, it is truly buyer beware.

When looking for wood furniture, most people have a particular quality and type in mind. In the furniture industry, this is known generally as "solid wood" furniture. While this moniker may be used for a piece of furniture, it is not always accurate. It often will refer to part of the piece being made from solid wood, but other "wood" sections are not. What are these other pieces? Glad you asked.

Plywood is the great wood substitute these days. Yes, that $2,000 couch or armoire may have a lot of plywood in it. Technically, plywood is...well, wood, but it is probably not what you had in mind when shopping. Plywood is actually often stronger than solid wood. It is made by gluing various pieces of wood together and the chemical bond results in a very strong material that is flexible and easy to use. At the end of the day, however, it is not what most people are looking for in wood furniture, so make sure to thoroughly check the pieces you are looking at.

Even less attractive is a "wood" known as particle board. Particle board is a recycled product. The remnants of wood cuttings are essentially glued together and pressed into board shapes. By remnants, I mean saw dust and chips from wood cuttings. Particle board is very strong, but it not particularly attractive. It is often used in furniture in areas that are not visible to the naked eye, which means it may or may not concern you if it is included in your "wood" furniture.

At the end of the day, the quality of the wood furniture you are considering is a matter of defining just what type of "wood" is actually being used.

Hey, Restaurant Guy, we?re your customers. That?s right, we pay your bills ? so listen up. Why are your bar stools so uncomfortable? Do you really want us to jump ship and move to another bar where we can adjust our attitude in comfort? Before you defend your bar stools, sit in one for thirty minutes without getting up. Do you feel relieved to get up, or do you want to order another toddy and kick back.

There are thousands of attempts at bar stool design ? meaning no bar stool designer has yet gotten it right. Bar stool design is a classic case of function forgotten by form. It is obvious to us, just by inspection (even more so by imperiling our posteriors), that bar stools are designed and selected for appearance ? not for our comfort. Somewhere there has to be an annual international competition for ?The World?s Most Uncomfortable Bar stool.? Judges would sit designers in their own creations and observe their pained expressions to establish each bar stool?s discomfort index. A perennial winner must to be the grape-pattern cast iron bar stool: cast iron legs, cast iron seat, cast iron arms and cast iron back. It takes two people to move one of these horrors, and the discomfort index is just below ?The Iron Maiden? used in the Spanish Inquisition.

Some importance has to be attached to the type of bar you operate. All bars can be lumped into three categories: 1) drinking bars, including those that serve some food; 2) holding-tanks for restaurant diners waiting to be seated; 3) body shops whose denizens prowl for companionship.

Everyone appreciates quality furniture. As people earn more money, they often move to larger homes and purchase better quality and larger sets of furniture. This can leave people wondering ---what should we do with all our old furniture? There are several ways to dispose of old furniture, all of which can be ecologically favorable, prudent or generous.

Some of the time unwanted furniture is in like-new condition, but more often it shows a bit of wear, and may be somewhat dated and out of style. Whatever condition the furniture is in, people have many helpful choices for its recycling.

Selling old furniture can be done through a small ad in the newspaper or a larger, more expensive ad if the furniture is more costly. Many community weekly publications will offer free or low-cost advertisements for items sold by private parties and not exceeding a certain dollar amount, which might be anywhere from $50 to $200. After that, most publications figure the person placing the ad can afford to pay for it so the rates become more standard, starting at a base rate and then so much for each additional word. If private sales are something a person wants to avoid, they can have a friend or relative do the selling and pay that person a pre-arranged fee or commission. For many people, this is a small price to pay to avoid the inconvenience of actually selling it themselves.

If a family has a lot of furniture, it is possible to have quality used furniture stores come to the home and appraise all the furniture, and then offer a specific amount for everything. The store will pick it up, and there is no more fuss. Depending on the quality of the furniture, the stores may resell it themselves, advertising it with ?estate sale? furniture. These prices will be more than the original sellers were paid, but the stores also have advertising, store expenses and payroll that private parties do not have to factor into the selling price.

Depending on the neighborhood, some people ask others in their own area first, and often items are sold to people just a few houses away. While it may not the be as much as what selling might bring in, it will still help to offset income a family would have had to pay taxes on. If a family were in a 20% tax bracket, and had a deductible contribution of $200, that would be $40 in taxes the family would not have to pay. What was given away actually would make some money for the people who donated it.

People who do not care about tax deductions, either because they feel the furniture is worth so little, or they are more anxious just to have it out of the house rather than saving a few dollars at tax time can advertise their furniture ?free? to anyone who wants it. Depending on the quality of the furniture, free is often the kind of bargain many people find hard to refuse, so if the advertising is very extensive, the furniture is usually gone quickly. Depending on where a person lives, there may be a community or association bulletin board. May supermarkets have bulletins boards for people to advertise this way, and they are usually without charge.

The more useful the furniture, the more creative options there are for giving it to people who might want it. Local hospice facilities are often furnished with slightly used, quality furniture. Domestic violence shelters frequently are in need of useful furniture, and neither of these have high operating budgets. They appreciate good quality used items when they are offered. On the chance that the local organization does not need such items, they probably will know of another agency or group that may. Calls to local churches will often result in willing takers, whether they are members of the congregation or organizations that a congregation actively supports. Even local schools, with funding shrinking each year, may accept sturdy tables, desks or bookshelves, depending on the needs of the teachers. They often do not accept furniture that must be dry cleaned, or that has padding, but rather look for items that can be washed, polished or painted so they can be sanitized.

The last idea is neither selling or nor giving away---it is actually keeping one or more pieces of old furniture, but utilizing them in a new and different way. A back porch area, cluttered with boxes and little that is truly useful can be turned into a display for potted plants, by painting an old wooden chair a bright green color and placing pots all over its flat surfaces. A table that has seen better days can become an art deco piece, by stenciling it with black and white designs and putting it near the laundry room, to hold hangars, laundry baskets or even laundry supplies.

That back, unused area can be turned into a tiny plays spot, complete with matching purple furniture for the children, with just a little sanding, paint and creativity. If painting is not desirable, a colorful throw can create a new bright chair for a child. These ideas can be used if there are available areas that can be converted into attractive places for either children or adults. For the home with no empty corner, keeping furniture is more of a challenge. However, if there is a piece of furniture that is too precious to part with, that holds so many wonderful memories, it can sometimes be modified or resized and refurbished to be integrated within the new furniture sets. The smaller the item, the easier it will be to integrate, but large pieces can also be retained. A new dining room set, in dark teak, might accept a bright red, lacquered ornamental table---which was actually used as a light brown coffee table in the living room just last year.

With all the options available, people need not worry about disposing of their old furniture. After asking themselves three simple questions, whether the furniture will be sold, given away, or retained?or any combination of these three choices, it is simple to seek out the appropriate next steps.

There is nothing wrong with importing chairs or blank parts to help cut down your production time. Submit your own designs and many importers will build to your exact specifications. Finishing the product yourself using this technique can still be labeled with the handmade label. This is a powerful technique but you have to order parts in larger quantities to make it work best.

If you are thinking about setting out to specialize in this field, it can be very rewarding. Knowing the obstacles before you get into is, can make the difference between staying in the market or moving on to something else.
